Fresh basil, provolone cheese, and sun-dried tomatoes make this meatloaf luscious!  Add breadcrumbs made with low carb bread and the texture is just like the meatloaf grandma used to make.

Italian Turkey Meatloaf

Serving Size: 4

Ingredients

  • 1 tbsp coconut oil (or olive oil)
  • 3/4 cup onions, chopped
  • 2 cloves Garlic, minced
  • 1/2 cup Sun-dried tomatoes, diced
  • 1 cup tomato sauce
  • 1 slice Julian Bread
  • 3/4 cup fresh basil, finely chopped
  • 1/2 cup Cheese, Provolone -- diced
  • 1 lg Egg
  • 1 1/2 lbs ground turkey

Instructions

  1. Preheat oven to 350 degrees.
  2. Saute onions and garlic in oil until tender. Set aside and let cool slightly.
  3. Tear Julian bread into pieces and pulse in food processor into fine crumbs.
  4. Combine onions, garlic, breadcrumbs, basil, cheese, egg, turkey and 1/2 cup of the tomato sauce in a large bowl and mix well with hands.
  5. Shape into a large loaf and spread the remaining 1/2 cup of tomato sauce over meatloaf.
  6. Bake for 45 minutes to 1 hour or until internal temperature reaches 165 degrees.
  7. Let stand 10 minutes before slicing.
