I made two servings of this recipe the other day–one for lunch and another for dinner on another day. Shrimp & Asparagus Stir Fry with Miracle Noodles

Serving Size: 2

Ingredients

  • 8 oz shrimp, peeled and deveined
  • 1 bag Miracle Noodles
  • 1 garlic clove (or 1/2 tsp garlic powder)
  • 1 tsp grated ginger (or 1/2 tsp ground ginger)
  • 1 tbsp Braggs Liquid Aminos
  • 1 lb asparagus, cut into two inch pieces

Instructions

  1. Prepare Miracle Noodles according to package directions.
  2. Spray a non-stick skillet with Pam and heat over medium high heat.
  3. Season shrimp with salt and pepper or seasoning of your choice.
  4. Add shrimp to skillet and brown on both sides.
  5. Add asparagus, garlic and ginger and continue to cook for another minute or two.
  6. Add drained Miracle Noodles and Bragg's Liquid Aminos.
  7. Add 1/2 cup of water and cook, stirring, for an additional minute.

Tanya, some Asian grocers or health food stores sell “shirataki” noodles. These are the same as miracle noodles.

I made this recipe today! Oh it is sooooo good. I know you made yours with your own seasoning mix, could you please share your recipe for the blacken seasoning?

I used some lemon pepper seasoning mix and just the Bragg’s with the asparagus. The noodles made it more filling and I have my lunch for tomorrow too.
